New Year’s Resolutions

It’s that time of year again, time to make your New Year’s Resolutions.  I know that some people dread the start of a new year, but I always welcome the end of the holidays and the beginning of January.  I love the idea of wiping the slate clean and starting off fresh in a new year.  I was also always the girl that got a bit too excited to buy all new school supplies at the beginning of each new school year.  In an effort to take my resolutions a bit more seriously this year I thought I would share them with you.  I promise I will check in periodically to let you know how I’m doing and share any fun stories.  Please note the not so subtle message in the image below… I’ve created an ambitious list.

Erin’s List of Resolutions

Eat Vegan twice a week.
Expand my vegetarian dinner recipes to include 2 Indian dishes, 1 crock-pot stew or rice maker dish, and one pasta dish that isn’t just boiling pasta and heating up sauce.
Perfect four new desserts. I am an absolutely terrible baker. I try and try and try and pretty much fail every time. Not this year!
Start a vegetable garden.
Begin composting.

It was at this point, while reading my resolutions to Zach, that he asked if I was also going to add that I will continue to shave my legs and wash my hair… seeing that all these resolutions were a bit hippy…. not that there’s anything wrong with that. 

Deepen my yoga practice by attending a minimum of two classes a week.
Break 24 minutes in a 5K Race.
Set a baseline time at an official 10K Race and then break that time by 2 minutes in a subsequent race.
Run more than 10 miles in one training run in sub 9 minute pace.
Learn to cross country ski.

Read at least two books a month.
Finally finish 100 Years of Solitude.  I know, I know… it’s a masterpiece… but in all seriousness I’ve been stuck on page 150 for about three months.

best of luck to you, erin! i read 100 years of solitude and loved it. but it literally takes 100 years to finish! are you a full time vegetarian? i highly recommend the vegan cookbook: appetite for reduction. they have a million delicious and easy recipes!

Rob and I ran the Mother’s and Father’s Day races in Portland last year – they’re well done and not a bad course – plus you end by running over home plate at Hadlock Field – makes you feel like a superstar to have a stadium full of fans cheering you on :) We also ran the LLBean 10k in Freeport – ridiculously hilly course so I don’t reccomend for a first like we did! haha

You can do it! I love Zach’s interjection – sounds like something Taylor would say! I will be in Maine a lot this spring/summer, maybe we can go for a run together? Or at the very least meet for coffee at one of those great bakeries in Portland.

Thanks for the awesome recommendations. I don’t think I want to do a race until it’s a bit warmer outside so I think these will work.

I am a full time vegetarian. I just hit my one year mark and I can’t imagine going back. Thanks for the cookbook recommendation. I’ll definitely give it a try.
